¼ cup minced onion

2 tablespoons minced red bell pepper

2 tablespoons minced celery

1 tablespoon capers

1 ¼ pounds fresh wild salmon, coarsely chopped

¼ cup mayonnaise

¼ cup panko bread crumbs

2 cloves garlic, minced

1 teaspoon Dijon mustard

1 pinch cayenne pepper

1 pinch seafood seasoning (such as Old Bay®)

1 tablespoon panko bread crumbs, or to taste

2 tablespoons olive oil, or as needed
Directions
Step 1: Sauté the Vegetables
Heat olive oil in a skillet over medium heat. Add onion, red bell pepper, celery, and a pinch of salt. Cook until soft and fragrant, then mix in capers. Let the mixture cool to room temperature.
Step 2: Prepare the Salmon Mixture
In a bowl, combine chopped salmon, sautéed vegetables, mayonnaise, breadcrumbs, garlic, mustard, cayenne, and seafood seasoning. Chill the mixture in the fridge for 1–2 hours to firm up.
Step 3: Shape the Patties
Form the chilled mixture into four evenly sized patties. Lightly coat each patty with additional breadcrumbs.
Step 4: Cook the Salmon Cakes
Heat olive oil in a skillet over medium heat. Cook the patties for 3–4 minutes per side until golden brown and cooked through.
