  • ¼ cup minced onion
  • 2 tablespoons minced red bell pepper

  • 1 ¼ pounds fresh wild salmon, coarsely chopped
  • ¼ cup mayonnaise
  • ¼ cup panko bread crumbs
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 pinch cayenne pepper
  • 1 pinch seafood seasoning (such as Old Bay®)
  • 1 tablespoon panko bread crumbs, or to taste
  • 2 tablespoons olive oil, or as needed

 

Directions

Step 1: Sauté the Vegetables

  • Heat 1 tablespoon of olive oil in a skillet over medium heat.
  • Add the minced onion, red bell pepper, and celery, seasoning with a pinch of salt. Sauté for 4-5 minutes, until the vegetables are soft and fragrant.
  • Stir in the capers and cook for another minute, then remove from heat and allow the mixture to cool to room temperature.

Step 2: Prepare the Salmon Mixture

  • In a large mixing bowl, combine the chopped salmon, sautéed vegetables, mayonnaise, ¼ cup of panko breadcrumbs, minced garlic, Dijon mustard, cayenne pepper, and seafood seasoning.
