Indian-Style Rice

Enjoy this recipe with your family and friends! Simple to make delicious to eat. We used one of our favorite brands Royal Basmati Rice. Great side dish to Grilled Chicken or just to eat on its own.

1 tablespoon vegetable oil
1 ½ cups Royal Basmati Rice
1 (14 ounce) can coconut milk
1 ¼ (14 ounce) cans chicken stock
½ teaspoon ground cumin
½ teaspoon ground coriander
1 pinch crushed red pepper flakes
1 teaspoon salt
¼ teaspoon ground turmeric
1 bay leaf
½ cup golden raisins
¾ cup cashew halves


Step 1
Heat oil in a large pot over medium-high heat. Add the dry spices, cumin, coriander, red pepper flakes, salt, turmeric and temper for about a minute. TIP: Tempering the spices helps draw out their flavor and deepen their impact in a dish.

Step 2
Stir in rice, and cook for 2 minutes.

Step 3
Pour in the coconut milk, chicken stock, golden raisins, and cashew halves. Gently Stir and combine.

Step 4
Bring to a boil, then cover, and reduce heat to low. Cook until rice is tender for about 20 minutes.
