Can I get on the side some Baked Zucchini? A twist on a popular side. Fries will be a thing of the past once you try these healthier alternative. Try them with ranch or your favorite dip.
Ingredients3/4 cup Italian seasoned bread crumbs
1/4 cup grated Parmesan cheese
1/4 teaspoon seasoned salt
1 large zucchini, peeled
1/4 cup butter, melted
Preheat an oven to 425 F. Line a baking sheet with parchment paper lightly greased with cooking spray.
Cut zucchini in half lengthwise and remove the seeds. Slice halved zucchini into 4 pieces.
Combine bread crumbs, cheese, and seasoning into bowl. Dip the zucchini fries into melted butter, then coat/roll into bread crumbs (cover well). Place breaded zucchini onto prepared baking sheet.
Bake the zucchini for 15 minutes or until zucchini fries are tender and slightly browned.
