Fava Bean Purée Spread

A delicacy! Rebecca Taylor was thinking about her love of culturally unique dishes and travel. This Fava Bean Purée with Toasted Simit recipe is such a simple appetizer that brings buttery, earthy and creamy texture to a piece of crusty bread. She used Simit; a Turkish bagel coated in sesame seeds. You can find fresh Fava beans at our stores, they’re at the end of season, but you can find them dried year-round!

Ingredients:
2 Cups Fava Beans
1 Yellow Onion
4 Garlic Cloves
Olive Oil
White Pepper
Sugar
Salt
Fresh Dill

Directions:
Remove fava beans from the pod and quickly blanch in boiling, salted water for about 3 mins. Rest the boiled beans in an ice bath, then peel the outer layer to reveal the tender, bright green fava beans. Sauté a diced onion and chopped garlic on medium heat in oil until fragrant. Add the beans, onions and garlic to a high speed blender and blend until smooth with about 3 tablespoons of olive oil, a few pinches of sugar, a bit of white pepper and salt. It needs to be extremely smooth without any lumps. Pour into a greased square pan and smooth out evenly. Let the purée mixture set overnight in the fridge and serve chilled with fresh dill, nice oil and crusty bread.
