-
4 (8-inch) flour tortillas

Step-by-Step Directions
Step 1 – Cook the Sausage
In a large skillet over medium-high heat, cook the ground sausage, stirring frequently, for 6 to 8 minutes until browned.
Step 2 – Add Vegetables and Eggs
Add the chopped red onion and peppers to the skillet. Cook and stir until softened. Crack in Eggland’s Best eggs, stir into the mixture, and cook for about 5 minutes until fully incorporated. Season with salt and pepper.
Step 3 – Warm the Tortillas
Heat tortillas in a skillet or directly over the grates of a gas stove until soft and pliable.
Step 4 – Assemble the Burritos
Spoon 1/4 cup of the sausage and egg mixture onto the center of each tortilla. Fold the top and bottom edges over the filling, then roll tightly to form burritos. Lightly mist each burrito with cooking spray.
Step 5 – Air Fry the Burritos
Place the burritos in the basket of an air fryer. Air fry at 400°F for 4 to 6 minutes. Flip the burritos, mist again with cooking spray, and air fry for another 2 to 4 minutes until golden brown and crispy.
To Reheat from frozen:
Preheat air fryer to 350°F. Load the basket with frozen burritos in a single layer. Spray lightly with cooking oil and cook for five minutes. After two minutes, turn burritos over and spray again with cooking spray. Let cook for another two to three minutes, remove and serve.
