Ingredient Checklist
½ cup butter
1 medium sized onion, chopped
1 (16 oz Package) chopped broccoli
4 Cans (14.5 oz each) chicken broth
2 Cups Colby or Cheddar Cheese cubed
2 cups milk
1 tablespoon garlic powder
⅔ cup cornstarch
1 cup water
Salt & Pepper to taste.
Shredded Cheddar and/or small chopped pieces of Broccoli to garnish
Directions
Step 1 Using a stockpot over medium heat melt your butter. Stirring occasionally add onions until softened. Stir in broccoli. Add broth and simmer until broccoli is tender for about 10 to 15 minutes.
Step 2 Reduce heat; add cheese cubes and stir until melted. Stir in milk and garlic powder until it’s fully incorporated. Salt and Pepper to taste.
Step 3 In a separate small bowl, stir cornstarch and water together until smooth. Pour cornstarch mixture into soup; cook, stirring frequently, until thick.
Step 4 Serve in a bowl. Garnish with shredded cheese, small bits of broccoli and bread on the side. Enjoy.
