Almonds have some great health benefits such as being high in fiber, protein, magnesium, and help to reduce cholesterol. Summer Blackberry Apple Almond Salad
For the Salad:
4 Cups Mixed Greens
6 oz. Blackberries
1 Apple chopped into bite sized pieces
½ cup Almonds chopped
For the Dressing:
2 Tablespoon Extra Virgin Olive Oil
1 Tablespoon White Vinegar
1 Teaspoon Lemon Juice
½ Teaspoon Maple Syrup
1 Teaspoon Water
Salt and Pepper to taste
For the salad:
Mix greens, blackberries, apples and almonds together in a large bowl. Add vinaigrette or other desired dressing and enjoy!
For the vinaigrette:
In a blender, blend olive oil, vinegar, lemon juice, blackberries (add more if desired), maple syrup, water, and salt and pepper until smooth.
1. Feel free to add goat cheese, feta cheese, blue cheese or your favorite cheese to this salad. It will only add to the flavor to give it that extra yumminess! Chicken is also a great addition to this salad!
2. Color of vinaigrette may vary depending on ripeness of berries and how many are used. If dressing seems thick, can add a touch more water or vinegar to help thin it out.
