 It's Grilling Season! It's getting warm out there so we went ahead and have 5 creative ways to get grilling this weekend, featuring surf and turf and even a couple veggie dishes!


BBQ Chicken and corn nachos
  • 5oz unsalted corn chips
  • ¾ cups of shredded chicken breast
  • ½ cup BBQ sauce
  • 2 oz. canned green chilies
  • 1 cup shredded Monterrey jack cheese
  • ½ cup corn
  • 1 tomato diced
  • ½ onion diced
 Directions: Preheat oven to 400 degrees. On a baking sheet, scatter chips and in a small bowl mix chicken with BBQ sauce. Add chicken, chilies, corn, onions and tomato’s, and then sprinkle cheese. Put in the oven just until the cheese is melted.


Asian chicken and cabbage salad

  • 4 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 2 cups shredded chicken
  • ½ toasted peanuts
  • Asian sesame dressing 
Directions: Combine ingredients, toss and serve!


 Black-eyed Pea bowl

  • 1 cup cooked brown rice
  • 1 cup diced green bell pepper
  • 3/4 cup diced onion
  • 1 clove minced garlic
  • 1/2 tsp.. ground cumin
  • 1/2 tsp. chili powder
  • 1/2 tsp.. cayenne pepper
  • 1 oz.. can black-eyed peas, drained
  • 1 tomato, diced
  • 1 cup chopped mushrooms
  • 3 cups chopped kale
  • 1/2  cup cooked brown rice
 Directions: In a large skillet, cook onions, bell peppers, cumin, chili powder, and cayenne pepper, then add black-peas, tomato's, and mushrooms. Cook until desired, then add cooked brown rice to bowl and add all ingredients on top to serve.


Vegetable kabobs

  • 2 medium zucchini, sliced in half
  • 1 cup mushrooms
  • 1 cup cherry tomatoes
  • 3 medium bell peppers
  • ½ red onion
  • 1 mango, peeled
  • Salt and pepper (To taste)
  • ½ olive oil
Directions: Preheat grill to medium heat. Place all cut ingredients into a large bowl add olive oil, salt and pepper, then toss. Thread ingredients onto the skewers. Lay kabobs on grill and cook. Using tongs, flip kabobs to the other side and cook.


Surf & Turf

  •  4 beef tenderloin steaks
  • 1lb. Raw Ez Peel Jumbo Shrimp
  • 2 garlic cloved, minced
  • 3 tbsp. olive oil
  • 1/4 cup minced fresh parsley
  • 3 tbsp. chopped green onions
  • 2 tbsp. minced fresh thyme
  • 2 tbsp. lemon juice
  • pinch of salt & pepper
  • 1/8 tbsp. cayenne pepper
  • 1/2 cup unsalted butter
Directions: In a small skillet, sauté garlic along with olive oil. Combine parsley, green onions, thyme, lemon juice, salt, pepper, butter, and cayenne. In a small skillet with garlic and prepared mix cook shrimp over medium heat. In a separate skillet place steaks along with pepper over medium heat, cook steaks in oil until meat reaches desired.
