A refreshing dish for this Summer heat! Make simple ceviche at home! Plus there's no need to be in front of a hot stove.. 😊
1/2 cup freshly squeezed lemon juice (About 5 limes)
2 jalapeño pepper, seeded and diced
1 teaspoon freshly extra virgin olive oil
1 pound shrimp, skin removed and cut into pieces
1/4 cup fresh cilantro leaves
1/4 cup sliced tomato, cut and diced
1/4 cup white onion, cut and diced
salt and pepper to taste
Place all ingredients into a large bowl and mix, allow shrimp to cook in lime juice. Refrigerate for 1 hour and serve!
