Eggland's Best: Breakfast Bake

A hearty baked breakfast that is easy to make! It has all the morning staples... Sausage, tater tots, veggies, cheese, and of course Eggland's Best eggs! All combined for a breakfast that the whole family can enjoy. Yummy.

Pep Time: 15 Minutes
Cook Time: 70 Minutes
Yield: 12

Ingredients:

1/2 tbsp olive oil

1 green bell pepper, diced

1 red bell pepper, diced

1/2 white onion, diced

1 lb breakfast sausage

1, 32 oz bag tater tots

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

8 large Eggland's Best eggs

2 cups milk (unsweetened almond milk or regular milk works!)

1 tsp salt

1 tsp pepper

1 tsp onion powder

1 tsp garlic powder

Preparation:

Step 1
Preheat oven to 350 and lightly spray 9x13 pan
Step 2
Add olive oil, bell pepper and onion to a pan over medium heat and sauté until fork tender (3-5 mins). Add breakfast sausage and cook through (7-10 mins)
Step 3
Add tater tots, shredded cheeses and breakfast sausage mixture to a large bowl and mix until well combined. Pour into the pan and spread into an even layer.
Step 4
In a separate bowl, whisk together eggs, milk, salt, pepper, garlic powder and onion powder
Step 5
Pour the egg mixture evenly over the tater tot mixture.
Step 6
Bake for 60-70 mins & ENJOY!
