Baked Chorizo Fundido

Cinco de Mayo Celebrations are in full effect and what better side dish than a Chorizo Fundido. This creamy baked Chorizo Fundido is easy but impressive, all your guest will be asking for more! You can garnish with chopped tomato, green onions or peppers and serve with tortilla chips. Very Addictive!

Ingredients

8 ounces fresh pork chorizo
½ cup sliced green onions, white and lighter green parts (Reserve Green Parts)
1 red bell pepper, diced
2 poblano chile peppers, diced
2 jalapeno peppers, diced
4 ounces cream cheese
8 ounces shredded Monterey Jack cheese
4 ounces shredded sharp Cheddar cheese
¼ cup sour cream

Directions

Step 1
On a cold skillet place chorizo, green onions, red bell pepper, poblano chilies, and jalapeno. Turn heat to medium-high as the skillet warms up in temperature start breaking up the chorizo into very small pieces. Continue cooking until the chorizo has browned and the peppers are barely cooked through for about 4 to 6 minutes. Remove from heat and if you notice that the chorizo released a lot of grease, mop up some with a paper towel.

Step 2
In a bowl mix cream cheese, chorizo mixture, Monterey Jack cheese, Cheddar cheese, and sour cream. Transfer this new mixture is a shallow, heat-proof baking dish.

Step 3
Set oven rack about 6 inches from the heat source and preheat the oven's broiler.

Step 4
Broil on high until browned and bubbly, 5 or 6 minutes.

Step 5
Garnish with your favorite toppings and serve with tortilla chips!
