St. Patrick's Day Lamb Stew

 Irish Stew

Celebrate the luck of the Irish with this delicious Lamb stew with potatoes, thyme, garlic and carrots. 


3 pounds leg of lamp cut into cubes
2 tablespoons unsalted butter
2 cups of water
1 tablespoon vegetable oil
1 cup chicken broth
1/2 teaspoon thyme
1/2 teaspoon pepper
2 garlic cloves, minced
4 medium potatoes, quartered
1/2 cup onions, minced 
1/2 cup mushrooms, diced 
1/3 cup flour 

Directions: Toss the lamb cubes with a few tablespoons of flour, and shake off excess flour. Heat, lamb in butter and oil in a large pot. Remove the meat and add the mushrooms to the dipping. Cook, until brown and tender. Add the lamb back to the pot along with water, broth, and all seasonings and cover for about an hour. Add potatoes and onions, cover and cook until vegetables are tender.
