 Looking forward to eating fresh this year? Meal bowls are perfect for meal prepping or when you want to make something quick to eat. Below are 2 of our favorite favorite recipes along with quick meal tips. 

Breakfast Tip:

Mix and match such as rolled oats, quinoa, fruits, granola, Greek yogurt, cottage cheese, cereal, or banana.

Lunch Tip:

Sandwiches and wraps are quick and healthy meals for on the go. 

Snack Tip:

Fruit and vegetables are snack favorites. Smoothies are a great pick me up in the afternoon. 

 quinoa salad

Quinoa Rice Salad


1 1/2 cups cooked quinoa

1 large eggplant, cut into 1/2 inch cubes

2 tablespoons olive oil

1 garlic cloves

1/2 cup Feta cheese

1/4 cup spinach 

1 freshly squeeze lemon juice

salt and pepper to taste


Cook Quinoa as directed on packaging. In a bowl, mix cubed eggplant, olive oil, garlic,spinach, lemon juice, and Feta cheese. Place in bowl and serve! 

zucchini salad

 Zucchini Salad 


3 zucchini, spiraled

1/2 cup Feta cheese

2 tablespoon olive oil

Salt and pepper to taste


Spiral zucchini, in a bowl mix all ingredients together and mix well. Place in bowl and serve.
