BBQ'in gets a bad reputation sometimes as being the domain of fatty meats and high calorie sauce. With the right ingredients the outdoor grill can be the focus of cooking a healthy meal. These grilled fruit skewers with shrimp make eating fruit exciting!
4 cups fruit chunks of strawberries, blueberries, pineapple (optional)
1/4 teaspoon cayenne pepper
2 lbs. cooked peeled and headless shrimp
1/2 cup fresh spinach
1/2 cup mozzarella cheese
Balsamic glaze for drizzling
Extra virgin olive oil for drizzling
Build a charcoal fire on grill. Soak bamboo skewers in a bowl of water and set aside. Combine glaze ingredients in a bowl and mix. Add the fruit and cooked shrimp to coat with glaze. Cover and refrigerate.
Thread the fruit and shrimp on the soaked skewers, alternating each fruit type. Place the skewers on the grill and cook directly over medium-high heat for 2 minutes on each side.
